The Best Croissant in Paris, Officially

So you think you know Paris? You might have the secret to skipping the lines at the Louvre. Maybe you’ve found the best used book store on the Left Bank. But do you know where to get the best croissant in the city? Until you do, you don’t know Paris.

Luckily, French newspaper Le Figaro has helped us on our quest and has finally put the best to the test. On a recent morning, some of the greatest culinary critics in France sat down with samples from the most renowned bakeries in the city and carried out a blind taste test to decide once and for all, who is king of the croissant.

The perfect croissant had to be shaped like a crescent moon and plump with a well-glazed, golden crust; have a light blonde interior honeycombed with pockets of air; have a delicate balance of salty butter and sweet wheat aromas; and be crispy, yet slowly melt in the mouth.

After two hours of intense scrutiny, the verdict was in. The winner, pâtissier Pierre Hermé, a man so passionate about croissants he once declared “I nearly hear its cry when people tear into it. The croissant is living. It is the soul of the pastry chef.”
